So, in my last post I mentioned that I was spending my Saturday night oven-drying strawberries. Okay, so I wasn’t sitting by the oven waiting for stuff to happen because lets be honest, I really don’t have the time to do that- thankfully, these babies were so easy to make that I didn’t have to fuss and bother at all!
I have an obsession with dark chocolate enrobed dehydrated strawberries- unfortunately they’re not something I can run down to the servo and buy, and they’re often the object of my late night cravings. These aren’t the same thing but they’ll tie you over! They pack a huge sweet punch, as cooked fruit tends to cause a higher glycemic index (spike in blood sugar) than its uncooked counterpart.
If you have three hours at home during which you can go to the kitchen a few times, here’s a healthy and delicious snack just for you!
Ingredients: 500g strawberries (will shrink as they bake), pinch of seasalt (optional:: enhances natural flavour of strawberries).
// Preheat oven to 100c- I know you’ll want to turn it up to speed up the process, but if it’s too hot you’ll just end up with a sticky, jammy mess!
// Line a baking tray or two with baking paper- don’t worry about any oil, they won’t stick.
// Cut the leaves and hull the core of the strawberries, and cut into 4-5 pieces each depending on the size of the strawberries.
// Dab each segment on both sides with paper towel to dry them out- this will help with the dehydration process.
// Lay the segments on the baking paper evenly spread out, with at least 1cm between each little strawberry piece. Sprinkle with sea salt if desired.
// Pop in the oven. After an hour, carefully turn pieces over. Repeat thrice more until the cooking time is done. I kept my oven door propped open so that I had excellent circulation in my not so excellent oven, but that’s up to you.
// Take out and let cool
// Enjoy with chocolate / nutella / on their own, for strawberry bliss!
